Ingredients
For the crunchiest salad, salt right before serving so the tomatoes and cucumber don’t water out.
- 2 medium (about 12 oz total)ripe tomatoes, chopped
- 1 large (about 12 oz)English cucumber, peeled and diced
- 1 small (about 4 oz)red onion, finely chopped
- 1 tbsp (15 ml)lemon juice (plus more to taste)
- 1/2 tspsalt (plus more to taste)
- 1/4 tspground black pepper (plus more to taste)

Wash and dry the tomatoes and cucumber. Peel the cucumber if you want a softer bite.

Toss and serve
